Temperature Matters

The most common mistake when brewing green tea is using water that's too hot. Boiling water (212°F) will make green tea bitter and astringent. The ideal temperature is 160-180°F. If you don't have a thermometer, let boiling water cool for 3-5 minutes before brewing.

  1. 1 Heat fresh, filtered water to 160-180°F (71-82°C). If you don't have a thermometer, bring water to a boil then let it cool for 3-5 minutes.
  2. 2 While water heats, warm your teacup or teapot by rinsing it with hot water. This prevents temperature loss when you add the tea.
  3. 3 Place green tea leaves or tea bag in your cup or teapot.
  4. 4 Pour the heated water over the tea leaves.
  5. 5 Steep for 2-3 minutes. Start checking at 2 minutes - green tea becomes bitter if over-steeped.
  6. 6 For loose tea, strain the leaves. For tea bags, remove the bag.
  7. 7 Taste the tea. If it's bitter, you've steeped too long or your water was too hot - adjust for next time.
  8. 8 Add honey or lemon if desired, though many prefer green tea plain to enjoy its delicate flavor.
  9. 9 Sip and enjoy while warm. Green tea can be re-steeped 2-3 times, increasing steeping time by 30 seconds each time.

Chef's Note

Different types of green tea (sencha, matcha, jasmine, etc.) may require slightly different temperatures and steeping times - check package instructions. For iced green tea, brew double-strength using the method above, then pour over ice. Green tea contains caffeine but less than black tea or coffee. Drink it plain or with minimal additions to get the full health benefits.
