Classic Italian starter with fresh tomatoes and basil on toasted bread

- 1 Preheat your oven to 400°F (200°C). Arrange bread slices on a baking sheet.
- 2 Brush bread slices lightly with 1 tablespoon of olive oil. Toast in the oven for 5-6 minutes until golden.
- 3 In a medium bowl, combine diced tomatoes, minced garlic, and chopped basil.
- 4 Add remaining olive oil, balsamic vinegar, salt, and pepper to the tomato mixture. Stir well to combine.
- 5 Let the tomato mixture sit for 5 minutes to allow flavors to meld.
- 6 Rub toasted bread with a cut garlic clove for extra flavor if desired.
- 7 Spoon the tomato mixture generously onto each toasted bread slice.
- 8 Serve immediately while the bread is still crispy and enjoy!
Chef's Note
For extra flavor, you can add a sprinkle of freshly grated Parmesan cheese on top. If making ahead, prepare the tomato mixture but toast the bread and assemble just before serving to maintain crispiness.
